Chicken Fajita Nachos

1. Chop up some leftover Chicken Fajitas (or beef, for that matter), microwave until piping hot and set aside.
2. On a microwave friendly plate, scatter tortilla chips (my favorite are Trader Joe’s Tortilla Chips with quinoa and black beans) and sprinkle them liberally with grated Pepper-Jack Cheese. Pop that in the microwave for a minute until bubbly.
3. Almost ready! just cover the chips with hot Fajita mixture, put on a dollop of your favorite salsa, sprinkle a little cilantro and enjoy!
